Olive Oil Cake


 
 
 

INGREDIENTS

3 large, room temp eggs
1 cup extra virgin, cold-pressed olive oil
1/3 cup plain greek yogurt (My Favorite)
1 1/4 cup whole milk/plant milk
1 teaspoon vanilla extract
1-2 freshly squeezed oranges (orange juice)
3 freshly squeezed lemons (lemon juice)
Orange and Lemon Zest (optional)
1 1/2 cup white sugar
2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon sea salt


Instructions

Preheat Oven: 325 Degrees

Crack eggs into large mixing bowl
Add olive oil and yogurt
Whisk together
Add milk, orange/lemon juice, lemon zest, vanilla extract
Whisk until smooth
Add white sugar, flour, baking powder, baking soda, and salt
Final Whisk

Pour batter into 9” greased pan (I use olive oil)
Bake for 50-55mins
(For flatter top, use Cake Strips)

Let the cake cool before dusking with a ton of powdered sugar
